Since the age of 16, Peggi Whiting has worked in Japanese restaurants and
apprenticed under sushi masters. After serving a church mission to Toyko,
Japan, she broke Japanese tradition by becoming the first Anglo woman to
apprentice under Master Inou, considered to be the finest sushi chef in
Japan.
Recently Sushi Chef Peggi and her husband Clint, purchased a 100-year-old
building in Salt Lake City to house their restaurant, Ichiban Sushi and it
was named by the prestigious Zagat Survery as one of American's 100 best
restaurants.
The annual Burn-off competition initiated by itamae-san Peggi a few years
ago will continue at 336 South 440 East, home of restaurant Ichiban Sushi.
